A Scrumptious First....Here's a retired recipe


Are you a fan of espresso or fancy coffee drinks?  (Because I definitely am!)  Mix that favorite flavor with cinnamon and sugar and the result is a Latte Doodle cookie.  Enjoy with your favorite hot beverage!


Latte Doodle Cookie

1/4 cup softened butter
1/4 cup shortening
3/4 cups sugar
1 eggs
1/2 teaspoon vanilla
2 Tablespoons instant coffee
1 1/2 cups flour
1 teaspoons cream of tartar
1/2 teaspoon soda
1/4 teaspoon salt

Preheat oven to 400 degrees

Cream together butter, shortening and sugar. Add egg. Add vanilla and then grind instant coffee in a coffee grinder, till of powder consistency, and then add into bowl.  In a separate bowl mix together flour, cream of tartar, soda and salt. Gradually add dry ingredients to wet.  

Roll into balls (size: to fit into ice cream scooper), then roll in topping mixture (1 tbsp. cinnamon, 3 tbsp. sugar)

Bake 12 mins.
yields: 8/9 large cookies

Scrumptious Does Wedding Cakes

 Not only does Scrumptious create beautiful Wedding Cakes, but we can also cater a complete dessert bar or offer a sweet selection of Injected Cupcakes for your special day.


I arrived to the Mission Viejo Country Club in Orange County this past weekend ready to make some memories for one happy couple! 
This is the latest cake in our Wedding Cake rĂ©pertoire, and this is what it started out looking like. In this cake the top and bottom round tiers are made of Red Velvet cake with White Chocolate mousse filling.  The middle square tier is Royal White cake with Raspberry filling.  All covered in Vanilla butter cream frosting, adorned with filigree designs and trimmed in black ribbon.


Add some fresh flowers cascading down and around the cake as well as a little sparkle in a few crystals, and the look is completely transformed.


It's time to cut the cake....Mr. and Mrs. Rodgers, here's to you!

These are a few of my favorite things...


Caramel Apple Cider cookie
 Cookies, Cookies and more NEW cookies!


These are a few of Scrumptious's favorite things....  The idea of this Caramel Apple Cider cookie came from a picture that Katie found in a blog.  From the outside it doesn't look very exciting, it's what's inside that will make your mouth water.  It is a very light cookie with the sweet flavor of crisp apple cider and in the center is a whole chewy caramel candy.  The key is to make a fresh hot pot of coffee, or cup of hot tea and rest the cookie on top for 2 minutes.  Then when you bite into the center of the cookie you get soft caramel that melts in your mouth! These cookies are perfectly paired with your coffee or tea as a late afternoon 'pick me up' snack. If you are a fan of caramel, you have got to try this one out.

Toffee Surprise is an idea that transpired around wanting a soft cookie that had a slight crunch of toffee in it.  Katie and I had shopped everywhere that sold candy looking for toffee that wasn't coated in chocolate.  It was impossible.  So we decided to make that the "surprise" factor, after all who doesn't like a little hint little chocolate?  In my opinion this cookie turned out great!  Soft and moist with ribbons of chocolate and a little toffee crunch.  YUM!

The next cookie featured is a custom that one of our dear clients and friends asked us to try.  It turned out so great that we decided to add it to our menu.  This is a sister to our Jam N'Shortbread cookie, meet Nutella N'Shortbread!  Now if you are a fan of Nutella you have got to try this out!  (We also have another cookie containing Nutella, our spin on a peanut butter cookie but better; Peanut Butter Nutella Swirl.) Typically, our Jam N' Shortbread cookies are jelly filled centers, you choose the jelly flavor, on top of a light and fluffy shortbread based cookie.  They are one of our most popular cookies and a definite favorite among our clients.  So, expanding on that same idea we have filled the center with creamy Nutella.  Ending with a rich flavor that will definitely satisfy your sweet tooth.

Now if you have any type of Gluten allergies or intolerances, like myself, then these next two cookies are something to consider.  I came up with these recipes for selfish reasons, I wanted the yummy, homemade taste in a cookie that I can enjoy again.
The first is a Gluten Free Lemon Bliss cookie.  It is based off of the "gluten full" recipe, baked with a mixture of gluten free flours.  I used a combination of brown rice flour, tapioca starch and potato starch.   That mixed with fresh squeezed Meyer lemons and lemon zest, makes these cookies very light.  To me, they have a fresh "Spring" taste, ready to welcome in the sunshine!

Lastly, I wanted to share my latest creation, which is not only Gluten Free, but low-fat!!!  I know, right?  How can a cookie be a ~healthy~ choice for one, for two be ~low-fat AND gluten free~ and for three still taste good?  it is possible!  This cookie has a flour base of Quinoa and oat flours, which was an experiment for me as it was my first baked good using Quinoa flour. It is also sweetened with Stevia, instead of regular white sugar, which is what lends to the low calorie count.  I am typically very against using sugar substitutes, because I personally do not like the after taste that most of them have.  The end product did not have that "funny" taste at all!  This cookie is substantial without being too heavy, has a great gf flour taste, and most importantly has my favorite ~dark chocolate~ mini chunks in it.  It's sinful...Gluten Free and low-fat...and fabulous dunked in a cold glass of milk!
